Broccoli, Carrot and Chicken Stir-Fry

Ingredients
  • ¼ cup chicken broth or water
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 2 tsp cornstarch
  • ½ tsp sesame oil
  • 1 tbsp canola (or peanut) oil
  • 1 lb (500 g) skinless, boneless chicken breasts, thinly sliced
  • 1 medium onion, cut into thin wedges
  • 2 garlic cloves, minced
  • 1 tsp finely chopped ginger
  • 3 medium carrots, peeled and cut into julienne strips
  • 3 cups broccoli florets
  • 2 cups sliced mushrooms
Instructions
  1. Combine the broth, soy sauce, hoisin sauce, cornstarch and sesame oil in a small bowl and set aside.
  2. Heat a wok or large frying pan over high heat.
  3. Add the canola oil, chicken, onion, garlic and ginger and stir fry for 5 to 7 minutes or until the chicken is almost tender.
  4. Add the vegetables and soy sauce mixture and stir-fry until the vegetables are crisp and bright and the chicken is tender.
Notes
Serving Suggestion: Serve with steamed egg noodles or jasmine rice.
