Chicken Quinoa Lettuce Wraps

These are flavorful and delicious, crisp, crunchy and very refreshing on a hot summer day!

Ingredients
  • ½ cup quinoa
  • 1 cup vegetable broth
  • 1 tbsp canola oil
  • 1 pound ground chicken
  • 1 stem lemongrass, pale section onle, finely chopped (can also be purchased in tubes)
  • 1 jalapeno, finely chopped
  • 1 shredded carrot
  • ¼ cup lime juice
  • 1 tsp finely grated lime rind
  • 1 tsp fish sauce
  • 1 tbsp sweet chili sauce
  • ½ small red onion, thinly sliced
  • ⅓ cup cilantro leaves
  • lettuce leaves
Instructions
  1. Combine Quinoa and broth in medium saucepan.
  2. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until liquid is absorbed.
  4. Cool.
  5. Heat half the oil in a wok over high heat until just smoking.
  6. Add ground chicken, lemon grass, jalapeno and carrot.
  7. Stir fry, breaking any lumps for 5 to 6 minutes until chicken changes color.
  8. Transfer to a heat proof bowl.
  9. Set aside for 15 minutes to cool slightly.
  10. Whisk together lime juice, fish sauce, sweet chili sauce and lime rind in a small bowl until combined, add to chicken mixture.
  11. Add red onion, cilantro, quinoa and combine thoroughly.
  12. Generously spoon mixture onto lettuce leaves and enjoy!
