Garlic chives or flowering chives have a small bud on the top of each stalk. Their mild flavor is a tasty addition to any stir fry. They can be found in many grocery stores or in Asian markets. If garlic chives are unavailable, use green onions.

Ingredients
  • ½ tsp salt
  • 2 tbsp dry sherry
  • 1 lb (500 g) skinless, boneless chicken breasts, thinly sliced
  • 1 tbsp cornstarch
  • ½ cup chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp sesame oil
  • 1 tbsp canola (or peanut) oil
  • 1 tsp finely chopped ginger
  • 2 garlic cloves, minced
  • 4 oz (125 g) sugar snap peas, trimmed
  • ¼ cup chopped garlic chives (or green onions)
  • ⅓ cup whole almonds, toasted
Instructions
  1. Combine the salt, sherry and chicken in a medium bowl and set aside.
  2. Combine the cornstarch, broth, soy sauce, oyster sauce and sesame oil in a small bowl and set aside.
  3. Heat a wok or large frying pan over medium high heat.
  4. Add the canola oil, ginger and garlic and stir fry for about 1 minute or until fragrant.
  5. Add the chicken mixture and stir fry for 3 minutes.
  6. Add the peas and broth mixture and stir fry for about 2 minutes or until the chicken is tender and the peas are crisp and bright green.
  7. Add the chives and almonds and stir fry until combined.
Notes
Serving Suggestion: Serve with piping hot, thin rice noodles.
