Pesto, Wine and Garlic Marinade

- ⅓ cup basil pesto
- 6 garlic cloves, minced
- ⅓ cup dry white wine
- ½ tsp salt
- 1 tbsp olive oil
- ½ tsp cracked black pepper
- 1 tbsp balsamic vinegar
- Combine all the ingredients in a large, non reactive bowl or resealable plastic bag.
- Add your favorite cut of of chicken to the marinade.
- Stir or toss to combine.
- Cover or seal.
- Marinate the chicken for about 8 hours or overnight.
- Remove the chicken from the marinade and discard any leftover marinade.
- Cook the chicken on a barbecue, grill pan or roast in the oven until tender.
Make ahead: This marinade can be made 2 days ahead and stored in an airtight container in the refrigerator.
Makes about ¾ cup.
