Pesto, Wine and Garlic Marinade

This is enough to marinate 1 lb (500 g) of chicken.
Ingredients
  • ⅓ cup basil pesto
  • 6 garlic cloves, minced
  • ⅓ cup dry white wine
  • ½ tsp salt
  • 1 tbsp olive oil
  • ½ tsp cracked black pepper
  • 1 tbsp balsamic vinegar
Instructions
  1. Combine all the ingredients in a large, non reactive bowl or resealable plastic bag.
  2. Add your favorite cut of of chicken to the marinade.
  3. Stir or toss to combine.
  4. Cover or seal.
  5. Marinate the chicken for about 8 hours or overnight.
  6. Remove the chicken from the marinade and discard any leftover marinade.
  7. Cook the chicken on a barbecue, grill pan or roast in the oven until tender.
Notes
Make ahead: This marinade can be made 2 days ahead and stored in an airtight container in the refrigerator.

Makes about ¾ cup.
