Lemon Grass and Lime Marinade

- ¼ cup lime juice
- 1 tbsp finely chopped ginger
- ¼ cup chopped fresh cilantro
- 2 tsp finely grated lime zest
- 3 tbsp Thai sweet chili sauce
- 1 tsp sesame oil
- 2 tbsp canola (or peanut) oil
- 2 garlic cloves, minced
- 2 tbsp finely chopped lemon grass
- 2 tsp fish sauce
- Combine all the ingredients in a large, non reactive bowl or resealable plastic bag.
- Add the chicken pieces of your choice.
- Stir or toss to combine.
- Cover or seal.
- Marinate in the refrigerator for 8 hours or overnight.
- Remove the chicken from the marinade and discard any leftover marinade.
- Cook chicken on a barbecue, grill pan or roast in the oven until tender.
Make Ahead: The marinade can be made 2 days ahead and stored in an airtight container in the refrigerator.
