Spiced Crumb Coating

This is enough to coat 4 chicken breasts.
Ingredients
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp salt
  • ¼ tsp cracked black pepper
  • ⅛ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground cardamom
  • 1 cup fine dry (or panko) breadcrumbs
  • ⅔ cup pecans, toasted
Instructions
  1. Put all the ingredients in a food processor.
  2. Process until the nuts are finely chopped.
  3. Crumb the chicken or roast for about 15 minutes until golden.
Notes
Make Ahead: This coating can be made a month ahead and stored in an airtight container in the freezer.
