Chicken Salad Sandwiches

Serves: 4 to 6 Sandwiches.
- 1½ cups chopped cooked chicken
- ⅓ cup thinly sliced green onion
- ⅓ cup finely chopped celery
- ⅓ cup finely chopped red pepper
- ⅓ cup whole egg mayonnaise
- 3 tbsp whipping cream (or half and half)
- salt and cracked black pepper
- 8 to 12 bread slices of your favorite bread, buttered if desired
- Combine the chicken, green onion, celery, red pepper, mayonnaise, cream, salt and pepper in a medium bowl.
- Top half of the bread slices with the chicken mixture and cover with the remaining bread slices.
Make Ahead: The filling can be made up to 3 days ahead and stored covered in the refrigerator.
TIP: A store bought roasted chicken saves time and is quick and easy when a recipe calls for cooked chicken.
