Gluten-Free Parmesan Chicken Wings

Ingredients
  • 3 lb(s) (1.5 kg) thawed chicken wings - purchase pre cut wings for convenience
  • 1 ½ cups gluten-free breadcrumbs
  • 1 ½ cups fine grated fresh Parmesan cheese
  • 1 ½ tsp smoked paprika or paprika
  • 1 ½ tsp chili powder
  • 3 tsp onion powder
  • 1 ½ tsp garlic powder
  • ½ tsp ground thyme
  • 3 large eggs
  • ¾ cups buttermilk or milk
Instructions
  1. Line 2 baking sheets with foil and place a cooling rack on each pan. Lightly brush the racks with oil.
  2. Pat the wings dry with paper towel.
  3. In a shallow bowl mix together the cheese, breadcrumbs and spices.
  4. In a separate bowl whisk together the eggs and milk of your choice. If using buttermilk reduce the eggs to 2 .
  5. Dip each wing into the egg mixture; then into the bread crumbs, gently pressing and evenly coating. Shake off any excess.
  6. Place on the racks, leaving a space between.
  7. Bake in a preheated 375ºF oven for about 45 minutes or until golden brown and cooked through.
  8. Time may vary depending on the size of the wings.
