Ingredients
  • 2 tbsp soy sauce
  • 1 tsp finely grated ginger
  • 2 tbsp maple syrup
  • 1 tbsp grainy mustard
  • 12 bone in chicken thighs
Instructions
  1. Grease a wire rack and place it on a baking sheet lined with parchment paper.
  2. Preheat the oven to 375ºF (190ºC).
  3. Combine the soy sauce, ginger, syrup and mustard in a small bowl and set aside.
  4. Place the chicken in a single layer on the prepared rack.
  5. Cook in preheated oven for 20 minutes.
  6. Brush with soy sauce mixture and cook a further 20 to 30 minutes, brushing with the soy sauce mixture during cooking until the chicken is tender.
