A great fall recipe that utilizes the abundance of apples and puts a little zing in the flavor.

Ingredients
  • 8 chicken thighs
  • 3 to 5 chipotles in adobo sauce, chopped (depends on your heat tolerance)
  • 1 medium onion, rough chop
  • 10 garlic cloves, minced
  • ¼ cup Worcestershire sauce
  • ¾ cup apple butter
Apple Butter
  • 10 crisp apples, such as Spartans, Macs or Granny Smiths, cored and cut into quarters
  • 1 cup of brown sugar
  • ½ cup of apple juice
  • ¼ tsp each of nutmeg, cloves, allspice and cardamom
  • 1 tsp vanilla extract
Instructions
  1. Mince the garlic, chop the chipotles and rough chop the onion.
  2. Combine the garlic, onion, chipotles, Worcestershire and apple butter in a dish and mix.
  3. Put the chicken thighs in a bag and add in the marinade.
  4. Refrigerate for at least 3 hours.
  5. Preheat oven to 425°F
  6. Line a 9 x 13 inch dish with foil, spray it with cooking spray
  7. Place the thighs skin side up in the dish and cover the marinade
  8. Bake for 30 to 45 minutes or until the internal temperature is 165°F
  9. Allow to rest for 5 minutes so the juices can redistribute
Apple Butter
  1. Place all ingredients into a large saucepan and cook over medium-high heat until apples break down and become very soft.
  2. Continue to reduce until 80% of the liquid has evaporated and the sauce is very thick and dark brown.
  3. Puree with an immersion blender, a standard blender or in a food processor.
