Chicken Broccoli and Cheddar Frittata

This light and flavorful Frittata is perfect for breakfast. Add a side of fruit and whole grain toast!

  • 2 cups fresh broccoli florets
  • 2 cups chopped, cooked chicken
  • 12 eggs
  • 1 red pepper, diced
  • ½ cup 10 percent half and half cream
  • ½ tsp. salt and pepper
  • 1 cup shredded Canadian cheddar or Swiss cheese, divided
  1. Preheat oven to 325 degrees.
  2. In a frying pan, lightly saute broccoli and red pepper until partially cooked.
  3. Lightly butter a 9 x 12 inch glass pan and scatter broccoli, red pepper, chicken and cheese on the bottom.
  4. In a large bowl, whisk eggs until blended.
  5. Whisk in cream, salt, pepper and pour over the chicken, vegetables and cheese.
  6. Bake for 30 to 35 minutes or until puffed golden and eggs are set.
  7. Let stand for 5 minutes before cutting into wedges.
